While crouching is pretty straightforward, rolling requires more steps to do.

How to Roll In GTA 5?
In GTA 5, you must equip a weapon, then right-click to aim, press the movement key (W/A/S/D) and backspace to roll.
Basically, rolling is a combination of 3 steps: aiming, moving, and jumping.
You can’t aim if you stay unarmed, so you have to press and hold the “Tab” button, then move your cursor to choose any gun or melee weapon according to your liking first.
Next, right-click to aim, then use W/A/S/D to let your character move. While moving, you can press Backspace so that your character starts rolling in any direction.
While rolling, you can completely avoid shots or damage from enemies. But keep in mind that it takes a little while to redo the movement. That said, rolling is a strategic skill.
